Crockpot Wheat Berry Chili

Nothing will warm you up on a cold day like a good bowl of piping hot chili. The only way it gets better is if that chili has 100% whole wheat berries. This recipe leaves the beans out and lets the wheat berries do all the work. My wife and I agree this recipe is a winner. Best of all, it doesn’t require any special tools or skills. Any amateur wielding a slow cooker and a bag of our wheat berries can make this chili like a pro! Use either soft white or hard red berries, your choice!

6-8 Servings

Ingredients:

2 C. Wheat Berries

4 1/2 C. Water

1 Pkt of your favorite Chili Seasoning

1 C. water

1 1/2 lbs. Ground Beef, browned, drained

5 C. Tomato Juice

2 C. Celery, chopped

2 C. Carrots, diced

1 C. Onion, chopped (optional)

1/2 C. Brown Sugar

1/2 C. Catsup

Directions:

1.     Put 2 cups of wheat berries in a crockpot.  Cover with at least 4 cups water.  Cook overnight on low.

2.     Rinse cooked wheat berries in cool water.  Return to the crock pot and add the rest of the ingredients.

3.     Mix thoroughly, cook on low heat setting for 8 to 9 hours.  Serve.

4.Store leftovers in refrigerator in airtight container, or in freezer.
