We grow three classes of wheat. Soft White, Hard Red Winter, and Hard White White. Soft White is ideal for cakes, cookies, pancakes, quick-breads, and flatbreads. The Hard Wheats are highly versatile and work well in most traditional yeast breads. The Hard Red Winter has a rich earthy taste, and the Hard White has a profile that is mellow and smooth.
