A specialty of the Pacific Northwest. 100% whole wheat flour ground from our own Soft White Wheat. This flour has a very fine, uniform texture, even without sifting. At 8.5% protein, it is ideal for pastries, flatbreads, cakes, and quickbreads that do not require yeast. Our soft white has a smooth, light flavor and texture that will work great in your recipes. Our 6 1/3 lb. bag is heat sealed for freshness, stands up so it won’t spill, and has a zip lock so you can reseal after opening. Substitute completely for all purpose flour in your recipes, or just use 25-50% to improve flavor and texture. Remember, because whole wheat flour contains oil from the wheat germ, it does not have the ultra long shelf life of conventional, all purpose flours. You may store this flour at room temperature for up to 3 months, 6+ months in the refrigerator, or over a year in the freezer.
